Riding from North east to Plymouth for ferry

AS the title suggests , the wifey and I will be shortly riding down from North east to catch the Plymouth ferry for an onward journey of Spain ,Portugal, France and return.
Looking at the route I'm wondering which would be best for us after the section that passes by Bristol ? Bath area : either continue toward Salisbury plain then drop onto southern leg of GWR or drop onto Great western below Bristol ? Bath area then follow route toward Honiton then drop onto southern leg from there , we've around 8 days to get down and will be riding back thru UK on return so Salisbury if missed out can be done then , if anyone can advise re the better alternative it'd be appreciated, cheers Speighty
