Hello Leon,
always difficult to give any advices about difficulties... as the level will depends about your physical conditions, your skill, your bike, weather conditions....
Most of the tracks in France have been design with gravels roads suitable for a normal cars but sometimes thinks can changes.
The proportion about off road is not the same on all the route, sometimes long off road sections and sometimes on road sections.
I would say 60 % off road.
The most important is to know when you've to stop!

The best way to know when to stop is when you starts making riding mistakes, in off road you will always a first warning: loosing quicly the front wheel without falling, lost your tracks, starting to be fed up being up on youyr pegs... It's means it's time to stop!
