Im thinking packets of cous cous that you just add water too, and tins of tuna.
what do others use?

Not sure why wildcamping should result in light weight food, unless you walk with a backpack.
I usually get some food, fresh or frozen (keeps the beer cold) in my thermobag and cook a sweet meal.

If you still want to stick to boiled water food, you find find meals at Decathlon or similar outdoor stores, chinese noodle dishes in nearly every supermarket or Uncle Bens half cooked Risotto meals.

Pasta, salami, rice, bean-tuna-corn tin can's is what i usually take with me. That said, you can always resuply during the day in the first village or town you will find.

JimmyJoy is 525 gram for 2100kcal and has everything you need. Not sure how that compares to cous cous but at least it's more nutritional.

Just buy your food at local shops/restaurants etc. each day. It saves weight too and supports the areas you are riding through.
I could see the appeal for some emergency stuff in remote areas.
