They are easy to handle indeed because of the low center of gravity. The main problem is that the bike is very heavy. I don't know if such software is available but it would seem that you are bringing along a lot of paper if the scale is anything near readable. I'm also not sure if this would be possible as the route traverses from left to right (etc.) on the screen so a simple map on a roll would have to be pretty...

You could even start out on a Honda Cub, fit a little more aggressive rear tyre and some cheap bags.
