There are mild sections but there are also very difficult ones.
So either don't do it, or plan to ride your dad's bike in difficult sections while he walks along.
But to be honest, I think there are other countries which are better suited to your group.

Indeed.
For something like the TET, rating would be done on sections of the trail, with colour coding or something similar.

A human with the same ability will have a much easier time with a lighter bike then a heavier bike on the same trail. Yes, but these are two different things.
